Grilled Chicken Recipe from The Stay At Home Chef
Ingredients
- 2 lemons juiced (about 1/4 cup)
- ¼ cup extra virgin olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon black pepper
- 3-4 garlic cloves crushed
- 4 boneless skinless chicken breasts
Instructions

In a small bowl, whisk together lemon juice, olive oil, basil, oregano, salt, pepper, and garlic.

Place chicken breasts into a large resealable plastic bag or shallow dish. Pour marinade over chicken.

Marinate in the refrigerator for a minimum of 30 minutes, or up to 8 hours.

Heat an outdoor grill over medium-high heat, about 400 degrees.

Grill chicken for 5 to 7 minutes per side, or until internal temperature reaches 165 degrees F.

Remove from grill and let rest 5 minutes before serving.

1 Tbsp. Chopped Tomatoes
1 Tbsp Chopped Green Onions
1 Tbsp Chopped Bell Peppers
1 Tbsp Cheddar Cheese

DIRECTIONS
- BEAT eggs in small bowl until blended
- COAT a small fry pan or skillet with nonstick spray or 1/2 Tbsp. butter. HEAT over medium-high heat until hot. ADD tomato, pepper and onion, and SAUTE for 1 minute or until tender.
- POUR eggs over mixture in pan. As the eggs begin to set, gently PULL the eggs across the pan to the center with a spatula.
- CONTINUE cooking – pulling, lifting and folding eggs – until thickened and no visible liquid remains. STIR in cheddar cheese. REMOVE from heat. SEASON with salt and pepper if desired. SERVE immediately.

- 1 cup frozen unsweetened strawberries
- 1/2 cup frozen unsweetened raspberries
- 3 tablespoons sugar
- 1 cup ice cubes
